50ml O.P. Anderson
15ml fresh Granny Smith apple juice
15ml fresh lime juice
3-4 black peppercorns
20ml spiced honey*
Handfull of mint
1 cinnamon stick
1 star anise
10 black peppercorns
Briefly muddle the peppercorns in the shaker, pour all the ingredients in and add ice. Shake and strain into a tall glass. Fill up with ice and top with soda. Garnish with a mint sprig, cinnamon stick and whole black peppercorns!
In a sauce pan add 1 whole cinnamon stick, 1 whole anise star, 10 black peppercorns and 1tsp of cardamom. Heat to around 60 oC and crush with a muddler for about 2 minutes. Pour 250ml of honey into the pan and 100ml of water. Mix together and turn off heat. Let sit for about 30 minutes, strain and put into air-tight container.
